Hot Pot

In Guilin on Monday, we tried hot pot. It was delicious. Tuesday in Chengdu, we also had hot pot, and it was even spicier. A Sichuan specialty whose flavor was still more delicious. Maybe China will teach me to eat hot.

    1. I don’t think there is a recipe. The cook used a wok with a little oil over a blazing fire. She was very fast and apparently unaffected by the heat. Threw things in with a flick of her wrist, shook the pan for a minute or two, then dumped it out and on to the next dish. She was amazing.

  1. It’s so good! One of my Chinese friends says that the Mala spice used in hot pot can be addictive. I don’t know how true that is, but it might explain why although I ate it only once, I still crave it.

  2. How are you doing with your chopstick handling? The food looks good. Will you try to recreate the recipe at home ?

    1. I loved chopstick use, Athanasia. Can’t say I was an expert by the time I returned home, but my skills had certainly improved. I am not a cook, generally, and won’t even try to recreate recipes. :)
